Simple Lasagne

Vegan. Serves 2 3

This recipe comes from my mum and has been made and enjoyed many times.

Ingredients

  • 2 carrots
  • 2 zuchini
  • 1 onion
  • 1 can of chopped tomatoes
  • 2 table spoons of tomato paste
  • teaspoon cumin
  • teaspoon corianda
  • 1 teaspoon paprika
  • teaspoon black peper

Instructions

  1. Grate carrots and zucchini
  2. Finely chop onion
  3. Fry onion until soft
  4. Add spices
  5. Add grated carrots and zucchini
  6. Cook until the carrots are soft
  7. Add chopped tomatoes and tomato paste
  8. Add a can of water if dry
  9. Assemble in layers, mix then pre-cooked lasagne sheets
  10. Leave for a few minutes to settle
  11. Top with your choice of cheese then bake until the lasagne sheets are done
