Spanish Rice

Vegan. Serves 2 3

This is an adaption of a traditional receipe.


  • 2 teaspoons olive oil
  • onion chopped
  • red capsicum chopped
  • 1-2 cloves garlic
  • teaspoon cumin (ground)
  • teaspoon ground coriander seed
  • teaspoon paprika
  • ground black pepper to taste
  • cup white rice
  • 400g (14 oz) can chopped tomatoes
  • 1 cup vegetable stock (broth)
  • salt to tast


  1. Saute the onion and capsicum in the olive-oil until the onion softens
  2. Add the garlic and cook for 1 minute
  3. Add the spices and cook for 30 seconds
  4. Stir in the rice and cook for 2 minutes.
  5. Add the tomatoes and stock and simmer until the rice is cooked.
