Spanish Rice
Vegan. Serves 2 – 3
This is an adaption of a traditional receipe.
Ingredients
2 teaspoons olive oil
½ onion chopped
½ red capsicum chopped
1-2 cloves garlic
¼ teaspoon cumin (ground)
¼ teaspoon ground coriander seed
½ teaspoon paprika
ground black pepper to taste
½ cup white rice
½ 400g (14 oz) can chopped tomatoes
1 cup vegetable stock (broth)
salt to tast
Instructions
Saute the onion and capsicum in the olive-oil until the onion softens
Add the garlic and cook for 1 minute
Add the spices and cook for 30 seconds
Stir in the rice and cook for 2 minutes.
Add the tomatoes and stock and simmer until the rice is cooked.
