Smoked Tofu, Lettuce and Tomato Sandwiches

Vegan. Makes 4 medium sandwiches

This is my version of the famous American BLT sandwich.

If you can’t find smoked tofu then substitute a vegetarian bacon substitute or marinated tofu or tempeh.

Add other salad ingredients as desired.

Ingredients

  • 100g smoked tofu, thinly sliced
  • 2 –3 large lettuce leaves, washed and well dried
  • 1 large, ripe tomato sliced
  • 1 – 2 teaspoons vegan mayonnaise
  • 8 slices wholegrain bread

Instructions

  1. On one piece of bread layer a quarter of the smoked tofu, then the tomato and lettuce.
  2. Drizzle a little mayonnaise over the lettuce
  3. Repeat with remaining ingredients
