Neville's Favorite Recipies
Spanish Rice
Vegan. Serves 2 –3
This is an adaption of a traditional recepie
Ingredients

2 teaspoons olive oil
-
1/2 onion chopped
-
1/2 red capsicum chopped
-
1-2 cloves garlic
-
¼ teaspoon cumin (ground)
-
¼ teaspoon ground coriander seed
-
1/2 teaspoon paprika
-
ground black pepper to taste
-
1/2 cup white rice
-
1/2 400g (14 oz) can chopped tomatoes
-
1 cup vegetable stock (broth)
-
salt to taste
-
Saute the onion and capsicum in the olive oil until the onion
softens
-
Add the garlic and cook for 1 minute
-
Add the spices and cook for 30 seconds
-
Stir in the rice and cook for 2 minutes.

Add the tomatoes and stock and simmer until the rice is cooked.
