Neville's Favorite Recipies
Simple Lasagne
Vegan. Serves 2 – 3
This recipe comes from my mum and has been made and enjoyed many times.
Ingredients
- 2 carrots
- 2 zuchini
- 1 onion
- 1 can of chopped tomatoes
- 2 table spoons of tomato paste
- ½ teaspoon cumin
- ½ teaspoon corianda
- 1 teaspoon paprika
- ½ teaspoon black peper
- Grate carrots and zucchini
- Finely chop onion
- Fry onion until soft
- Add spices
- Add grated carrots and zucchini
- Cook until the carrots are soft
- Add chopped tomatoes and tomato paste
- Add a can of water if dry
- Assemble in layers, mix then pre-cooked lasagne sheets
- Leave for a few minutes to settle
- Top with your choice of cheese then bake until the lasagne sheets are done
